This is a dish my mother used to make for us when I was growing up so naturally I though it was a common thing. As it turns out, Stewed Tuna is not as common as I thought it was and most people just use canned tuna to make Tuna Salad. However, if you like canned tuna and never had this dish before, this is a recipe that can change your life.
For this dish we will need
1 Large onion thinly sliced
2 Cloves of garlic
2 Pimento peppers sliced
2 Tomatoes diced
2-3 Shadon Beni leaves chopped finely
2 Tins of Tuna Chunks in water
2 Tablespoons of Roucou
1/2 Lime
Salt & Black Pepper (to taste)
The cooking method is very straightforward, no bells and whistles here, just a combination of the right ingredients to create great flavor.
Saute onions on medium to high heat for 30 seconds
Add garlic and pimentos and continue to saute for another 30 seconds until aromatics are fragrant
Add tuna chunks and tomatoes
Squeeze in the juice from the lime
Add roucou
Add Shadon Beni
Season with Salt & Pepper to taste
Add two tablespoons of water (optional)
Reduce to low heat, cover and simmer for 5 minutes
