Stewed Tuna is a dish my mother used to make for us when I was growing up so naturally I though it was a common thing. As it turns out, this dish is not as common as I thought it was and most people just use canned tuna to make Tuna Salad. However, if you like canned tuna and never had this dish before, this is a recipe that can change your life.
Stewed Tuna
Ingredients
- 2 Tins of Tuna Chunks in water
- 1 large onion thinly sliced
- 2 cloves garlic
- 2 pimento peppers thinly sliced
- 2 tomatoes diced
- 2-3 leaves shadon beni chopped finely
- 2 tbsp of Roucou
- 1/2 Lime
- salt to taste
- black pepper to taste
Instructions
- Saute onions on medium to high heat for 30 seconds
- Add garlic and pimentos and continue to saute for another 30 seconds until aromatics are fragrant
- Add tuna chunks and tomatoes
- Squeeze in the juice from the lime
- Add roucou
- Add Shadon Beni
- Season with Salt & Pepper to taste
- Add two tablespoons of water (optional)
- Reduce to low heat, cover and simmer for 5 minutes
- Serve with bread, bake, rice or pasta
- Enjoy!
