Chef Damien Charles throws down an epic Passion Fruit BBQ Ribs seasoned with Cuisine’s Zesty Rib Rub and glazed to perfection using a homemade Passion Fruit Barbecue Sauce. Passion Fruit BBQ Ribs
Ingredients
- 1 rack of ribs
- 1/4 cup Cuisine Zesty Rib Rub
- 1 cup ketchup
- 2 tbsp mustard
- 2 tbsp Worcestershire sauce
- 2 bay leaves
- 1 cup unsweetened passion fruit juice
- 3 tbsp sugar
- 2 tbsp tomato paste
- salt & black pepper to taste
Passion Fruit BBQ Sauce Method
- Add passion fruit juice, ketchup, mustard, Worcestershire sauce, tomato paste, bay leaves and sugar to a saucepan then combine well
- Season with salt and black pepper
- Cook on medium/ low heat until the mixture reduces and thickens, approx 15 – 20 minutes
Ribs Method
- Apply spice blend to ribs
- Place in baking tray or roasting pan and cover with foil
- Bake in a preheated oven at 375 degrees for 2 1/2 hours
- Remove ribs from oven then baste with Passion Fruit BBQ sauce
- Return to oven then broil for 15 minutes
- Allow to rest for 10 minutes before cutting
Red Beans
Ingredients
- 1 can Cuisine Red Kidney Beans
- 1 medium sized onion, diced
- 3 cloves of garlic, minced
- 1 thumb sized piece of ginger, finely chopped
- 1 cup of pumpkin, diced
- 2 bay leaves
- 1 medium sized sweet pepper, chopped
- 3 blades of chive, finely chopped
- 2 tbsp Cuisine Soyabean Oil
- 1/4 cup water
- 2 tbsp tomato paste
- 1 tsp mustard
- 2 tbsp Cuisine Demarara Brown Sugar
- 1 tbsp Worcestershire Sauce
- Salt & Black Pepper, to taste
Red Beans Method
- Add oil to a pan then saute onions, garlic and ginger for 1 minute on medium heat
- Add pumpkin and sweet peppers then continue to saute for 5 minutes
- Add chives, bay leaves, kidney beans, tomato paste, mustard, Worcestershire sauce, brown sugar
- Season with salt and black pepper then continue to saute for 3 minutes
- Add water, cover and allow to simmer for 10 to 15 minutes
Corn Bread
 Ingredients
- 1 cup Cuisine All Purpose Flour
- 2 cups Cornmeal
- 1 tin Cuisine Cream Style Corn
- 1 cup Cuisine Full Cream Milk
- 1 tbsp baking powder
- 1 tsp baking soda
- 1 tbsp sugar
- 1 egg
- 1/2 tsp salt
- 1/4 cup oil or butter
Method:
- Add dry ingredients to a bowl and combine well
- Combine milk, eggs, oil and cream style corn in a separate bowl
- Mix dry ingredients with wet ingredients until fully combined
- Transfer batter to a greased bread pan, muffin tray or cast iron skillet
- Bake in a preheated oven at 350 degrees for 25 minutes
