The challenge after Christmas is to not get tired of eating leftovers. This leftover turkey salad is a great way to remix that leftover turkey into a whole new meal. This recipe is a welcomed change from the heavier meals we might have for the holidays. The sorrel vinaigrette with a few splashes of Angostura Orange Bitters is yet another creative way to remix sorrel! The great thing about salads like this is that you can literally use whatever you have in your fridge to put together something amazing!
Leftover Turkey Salad
Ingredients
- 1 bundle kale (chopped)
- 3 tomatoes (diced)
- 2 cucumbers (diced)
- 1 purple onion (sliced)
- 1 carrot (grated)
- 5 pimentos (sliced)
- 1 can whole kernel corn
- 1 bundle parsley (chopped)
- 2 cups turkey breast (diced)
Sorrel Vinaigrette
Ingredients
- 3 tbsp sorrel juice
- 1/2 cup olive oil
- 1 tsp garlic (minced)
- Angostura Orange Bitters
- salt & black pepper (to taste)
Method
- Add ingredients into a mixing bowl.
- Add a few liberal dashes of Angostura Orange Bitters to mixture.
- Whisk ingredients together until well combined.
Leftover Turkey Salad Assembly
- Toss salad ingredient together in a large mixing bowl.
- Drizzle with sorrel vinaigrette.
- Toss.
- Enjoy!
