Chef Brigette puts a twist on a classic Italian pasta dish. This Tomato & Basil Puttanesca features simple ingredients like fresh tomatoes, olives, capers and Brunswick Tomato & Basil Sardine Fillets. This is a quick and easy pasta dish that combines different flavor components to create a magnificent medley of deliciousness.
Tomato & Basil Puttanesca
Ingredients
- 2 tins Brunswick Tomato & Basil Sardine Fillets
- 1 pack or 400g Spaghetti cooked
- 6 tomatoes peeled
- 5 cloves garlic minced
- 1 large onion chopped
- 3 tbsp capers chopped
- ⅔ cup olives sliced
- ½ cup parsley chopped
- 2 tbsp basil chopped
- 1 tsp red pepper flakes
- ¼ cup olive oil
- ¼ cup hot water
- salt and black pepper to taste
Instructions
- Add olive oil to a pot then add garlic and red pepper flakes, sauté on medium/low heat for 1 minute or until garlic is fragrant.
- Add onions and sardines then continue to sauté for 2 to 3 minutes.
- Add tomatoes to the pot, making sure to mash them into smaller bits in the pot.
- Add hot water then continue to sauté for 5 minutes on medium/low heat.
- Add capers, olives and basil to the pot then season with salt and black pepper to taste.
- Add cooked spaghetti to the pot.
- Remove from heat then add fresh parsley.
- Serve with freshly cracked black pepper.
