Tomato & Basil Puttanesca
2 tins Brunswick Tomato & Basil Sardine Fillets
1 pack or 400g Spaghetti (cooked)
6 tomatoes (peeled)
5 cloves garlic (minced)
1 large onion (chopped)
3 tbsp capers (chopped)
2/3 cup olives (sliced)
1/2 cup parsley (chopped)
2 tbsp basil (chopped)
1 tsp red pepper flakes
1/4 cup olive oil
1/4 cup hot water
salt and black pepper (to taste)
Add olive oil to a pot then add garlic and red pepper flakes, sauté on medium/low heat for 1 minute or until garlic is fragrant.
Add onions and sardines then continue to sauté for 2 to 3 minutes.
Add tomatoes to the pot, making sure to mash them into smaller bits in the pot.
Add hot water then continue to sauté for 5 minutes on medium/low heat.
Add capers, olives and basil to the pot then season with salt and black pepper to taste.
