Beef & Fish Pies
These Trini beef & fish pies are the perfect recipe that’ll keep the kids busy for the carnival weekend or the ideal treat to take to the Savannah or Carnival lime. The incorporation of butter with the Cuisine All Purpose Flour leads to a crumbly and delicious crust. And of course, we can’t forget the Trini green seasoning to flavour the fillings! In this video, Emily fills her pies with tuna and beef but please, feel free to choose your own adventure. Cheese, potato, pork and chicken all make great fillings to this treat.
Savoury Crust
- 2 ½ cups of Cuisine All Purpose Flour
- 1 teaspoon of salt
- 8 oz butter, cold and cut into cubes
- ¼ cup of iced water
Beef Filling
- ½ pound of minced meat
- 1 tbsp of Cuisine Soyabean Oil
- 1 onion, chopped
- 1 pimento, chopped
- 4 cloves of garlic, minced
- 1 tbsp of Trini green seasoning
- 1 teaspoon of pepper sauce
- Salt, to taste
Egg Wash
- 1 egg + 1 tablespoon of water
Tuna Filling
- 1 can of Cuisine Tuna Flakes in Water
- 1 tomato, chopped
- 1 onion chopped
- 1 clove of garlic, minced
- 2 teaspoons of lime juice
- Black pepper, to taste
Crust Method
- In a large bowl, combine the flour and salt.
- Using clean hands, toss the butter into the butter.
- Work the pieces of dough into the flour until the mixture resembles rough wet sand .
- Stream the cold water into the mixture and gently work into a dough.
- Transfer the dough onto plastic wrap and form into a disc that is ½ inch thickness.
- Chill for at least 45 minutes.
Beef Filling Method
- In a medium saucepan, heat the Cuisine Soyabean Oil.
- Add onion, garlic and seasonings.
- Add beef and cook until brown.
- Season with pepper sauce and salt.
- Set aside to cool
Tuna Filling
- In a medium saucepan, add onions, garlic and tomato.
- Add tuna and cook until fully warm. Add lime juice and black pepper.
- Set aside to cool.
Assembly
- Preheat oven to 350ºF.
- Roll out the chilled dough to ¼ inch thickness.
- Using a 4 inch ring cutter or the rim of a container, punch circles out of the dough.
- Wet half of the edge of the dough with water.
- Place two teaspoons of filling into the center of the dough.
- Fold the dough over and seal with a fork.
- Repeat the process for all of the dough circles.
- Using a fork, poke holes into each pie.
- Assemble the formed pies onto a cookie sheet lined with parchment paper.
- Brush each pie with the egg wash.
- Place into oven and bake for 20 minutes or until golden brown.
