Omelettes are one of those dishes that many first time cooks find difficult to prepare. This omelette recipe uses very basic ingredients but delivers on flavor. The truth is, making a great omelette is less about the ingredients and more focused on the process. This recipe is easy to follow and demonstrates step by step the key components to getting a decent final product.
Omelette
Ingredients
- 3 eggs
- 2 pimentos finely chopped
- 1/2 onion finely chopped
- 1/4 sweet pepper finely chopped
- 1 celery stalk finely chopped
- 1/4 tsp red chili flakes
- oil / butter for frying
- salt & black pepper to taste
Method
- Crack eggs into a bowl then whisk until doubled in volume
- Add oil to a pan on medium heat then sauté onion, pimento, celery and sweet pepper for 45 seconds to 1 minute
- Transfer sautéed aromatics to a plate then return the pan to the stove on low heat. Be sure to wipe the pan clean so no pieces of aromatics remain stuck to the pan.
- Add oil or butter to the pan then swirl to make sure the bottom and sides are well coated
- Whisk eggs to incorporate air into them before adding to frying pan. This will ensure a more fluffy omelette.
- Swirl eggs around at the bottom of the frying pan or use a spatula to allow the uncooked egg to make contact with the bottom of the frying pan.
- Cook eggs for 2 minutes on low heat.
- Add aromatics to the “bottom half” of the egg then use a spatula to flip the “top half” over
- Slide omelette onto a plate then season with salt, black pepper and red chili flakes
- Garnish omelette with celery and chives
