I could easily call this Black Beans & Rice Cookup a Black Beans Pelau but I didn’t want to start another Pelau War #neverforget, but this dish looks very much like a pelau although it doesn’t feature the signature caramelizing of brown sugar step in the process that pelau is known for. This is a easy and affordable meal to throw together for lunch or dinner and it features a bit of Latin American influence in the flavor profile using a combination of annatto/ roucou, coriander seeds and shadon beni for great flavor.
Use the broad side of a knife to crush the coriander seeds
Toast the spice until it goes fragrant
Allow the spices to toast in the oil for 30 seconds before adding aromatics
Sauté the aromatics until onions are translucent.
Add roucou for color and flavor
Add the Cuisine Black Beans to the party
Rule of thumb: Equal parts water to equal parts rice.
Cover then allow to cook on low heat until rice is tender.
Add fresh shadon beni for some great herb flavor
Fresh herbs always bring an added layer of flavor to rice dishes.

I have powdered annatto. How much would I use for this recipe to replace the liquid 2 tbsp of roucou (annatto extract)?
