I could easily call this Black Beans & Rice Cookup a Black Beans Pelau but I didn’t want to start another Pelau War #neverforget, but this dish looks very much like a pelau although it doesn’t feature the signature caramelizing of brown sugar step in the process that pelau is known for. This is a easy and affordable meal to throw together for lunch or dinner and it features a bit of Latin American influence in the flavor profile using a combination of annatto/ roucou, coriander seeds and shadon beni for great flavor.
Black Beans & Rice Cookup
Ingredients
- 1 tin Cuisine Black Beans
- 2 cups Cuisine Parboiled Rice
- 2 cups water
- 4 cloves garlic minced
- 1 onion finely chopped
- 1 tbsp minced ginger
- 4 pimentos finely chopped
- 1 bundle chives chopped
- 4 shadon beni leaves finely chopped
- 1 bay leaf
- 1 tbsp coriander seeds
- 2 tbsp roucou (annatto extract)
- 2 tbsp oil
- salt & black pepper to taste
Method
- Toast coriander seeds in the pot until they start to pop and get fragrant
- Add oil to the pot then add aromatics: onion, pimento, ginger, garlic, chives, bayleaf. Season with salt and black pepper then sauté for 3 minutes
- Add roucou and Cuisine Black Beans and Cuisine Parboiled Rice to the pot and simmer for 5 minutes
- Add water then taste for salt. Adjust to suit then cover and allow to cook on low heat for 10 minutes
- Add fresh shadon beni leaves then toss
- Serve & Enjoy

I have powdered annatto. How much would I use for this recipe to replace the liquid 2 tbsp of roucou (annatto extract)?
