Beef Lo Mein
Ingredients
- 2 Angus Beef Eye Round Steaks thinly sliced
- 2 cups Chow Mein Noodles
- 1 large onion sliced
- 1 carrot cut into strips
- 1 sweet pepper cut into strips
- 1 cup broccoli sliced
- 1 cup shredded cabbage
- 1 cup string beans chopped
- 1 tbsp minced ginger
- 4 tbsp minced garlic
- 1/2 cup chopped chives
- 1 tbsp 5 spice powder
- 2 tbsp oyster sauce
- 1 tbsp dark soy sauce
- 1 tsp dark soy sauce
- 2 tsp baking soda
- 1 tbsp red pepper flakes
- 1 tbsp cornstarch
- 1 tbsp MSG
- 1 tsp sugar
- vegetable oil
- salt & black pepper to taste
Velveting The Beef
To prepare the beef for our beef lo mein we have to do a process called velveting which is essentially a necessary step in tenderizing beef for stir fried dishes. To achieve this you will need to add baking soda, cornstarch, a drizzle of oil and one tablespoon of soy sauce to the beef and combine well. Set aside and leave to marinate for 10 minutes.
Cooking The Noodles
Make sure your water is at a rolling boil and salt the water before adding the noodles to cook. It’s important to make sure you use enough water so the noodles have enough liquid to cook evenly without clumping up. For two cups of noodles use about five cups of water. Cook the noodles for 4 -5 minutes, drain then transfer to a bowl.
Making The Stir Fry Sauce
To make the sauce for our Beef Lo Mein combine oyster sauce, soy sauce, red pepper flakes, MSG, sugar and black pepper in a bowl.
