Guinness Glazed Fish & Chips

Guinness Glazed Fish

Afiya puts a bold spin on Baidawi’s Korean Fried Chicken recipe using a Guinness glaze to finish off these crispy and delicious Guinness Glazed Fish with rustic chips.

Ingredients

  • 2 Fish Fillets cut into “fingers”
  • 2 tbsp lemon pepper
  • 4 sprigs fresh thyme finely chopped
  • 1 cup corn starch
  • 2 tbsp honey
  • 1 tbsp dried thyme
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 2 tbsp tomato paste
  • 1/2 cup Guinness
  • salt & pepper to taste
  • 1 cup of oil for frying

Method:

  1. Season fish “fingers” with salt, lemon pepper, thyme and allow to marinate for at least one hour
  2. Dredge each piece of fish in corn starch until fully coated
  3. Shallow fry fish until they start to get light brown (approx 3 minutes per batch)
  4. Remove from oil and drain, then fry again in oil until golden brown (approx 3 minutes per batch)
  5. Drain oil and set aside
  6. Add a tbsp of oil to a frying pan
  7. Lightly toast onion powder, dried thyme and garlic powder until fragrant
  8. Add tomato paste and Guinness then saute for 1 minute
  9. Add honey, season with salt and black pepper
  10. Continue to saute until mixture starts to thicken
  11. Remove from direct heat then toss fried fish fingers until each piece is evenly coated
  12. Serve with your favorite sides
  13. Enjoy
