Ingredients

Fish Fillets cut into "fingers"

lemon pepper

sprigs fresh thyme finely chopped

corn starch

tbsp
honey
1
tbsp
dried thyme

tbsp
onion powder
1
tbsp
garlic powder

tbsp
tomato paste
½
cup
Guinness
salt & pepper to taste

cup
of oil for frying
Instructions
Season fish "fingers" with salt, lemon pepper, thyme and allow to marinate for at least one hour
Dredge each piece of fish in corn starch until fully coated
Shallow fry fish until they start to get light brown (approx 3 minutes per batch)
Remove from oil and drain, then fry again in oil until golden brown (approx 3 minutes per batch)
Drain oil and set aside
Add a tbsp of oil to a frying pan
Lightly toast onion powder, dried thyme and garlic powder until fragrant
Add tomato paste and Guinness then saute for 1 minute
Add honey, season with salt and black pepper
Continue to saute until mixture starts to thicken
Remove from direct heat then toss fried fish fingers until each piece is evenly coated
Serve with your favorite sides
