This Trini Curry Beef recipe is close to what you would typically find in some roti shops in Trinidad & Tobago. Instead of doing the low and slow method, this recipe uses a pressure cooker to get the beef nice and tender then finishes it off with the curry part. The final outcome is a tender and flavorful curry beef that goes great with roti or rice.
If you aren’t into beef you can definitely apply this same recipe to goat for the same great results!
Trini Curry Beef
Ingredients
- 3 lbs beef stew
- 2 large onions diced
- 10 cloves garlic
- 3 tbsp minced ginger
- 1 scotch bonnet pepper chopped (optional)
- 10 leaves broad leaf thyme chopped
- 2 tbsp coriander seeds
- 2 tbsp whole geera
- 2 tbsp methi
- 4 tbsp curry powder
- 3 tbsp oil
- salt & black pepper to taste
- 12 cups water
Method
- Toast coriander, methi and geera in a frying pan until fragrant
- Transfer spices to a spice grinder or mortar and pestle then grind into a fine powder
- Season beef with ground spices, salt & black pepper
- Add two tablespoons of oil to a pressure cooker then sauté 1/2 onions, ginger and garlic for 1 minute
- Add beef then allow to cook uncovered for 8 minutes or until beef gets a nice brown color
- Add water to beef then cover and allow to cook in the pressure cooker for one hour
- Add one tablespoon of oil to a pot then add one clove of garlic and allow to cook until garlic is dark brown
- Add the remaining onions and chopped pepper then sauté for one minute
- Add curry powder then allow to cook for 5 minutes
- Add liquid from cooked beef and thyme then allow to cook for 5 minutes
- Add beef then cover and reduce heat to low.
- Cover and allow to cook for 10 minutes
