Roasted Carrot Soup

In the words of Dj Khaled… Another One. A simple and delicious soup that I’m pretty sure based on the ingredients we used, is good for curing or helping with some kinda ailment. I suggest you try this if not for the obvious health benefits then at least for the pure deliciousness.

Ingredients:

  • 4  Carrots
  • 3 Onions
  • 1 Head of Garlic
  • 1 Tsp Fresh Ginger
  • 1 Tsp Fresh Turmeric
  • 1 Cup Coconut Milk
  • 2 Cups Water
  • Salt & Pepper (to taste)

Method:

  1. Place whole peeled carrots, onions cut in half and whole head of garlic on a baking sheet, drizzle with olive oil and season with salt and black pepper
  2. Roast in a preheated oven at 400 degrees for 25 – 30 mins
  3. Cut up carrots and put in a blender with onion, garlic, ginger and turmeric
  4. Add two cups of water and blend until smooth
  5. Put mixture back in a pot, add coconut milk and simmer for 10 minutes
  6. Season with salt and pepper to taste
  7. Enjoy
