Place whole peeled carrots, onions cut in half and whole head of garlic on a baking sheet, drizzle with olive oil and season with salt and black pepper
Roast in a preheated oven at 400 degrees for 25 - 30 mins
Cut up carrots and put in a blender with onion, garlic, ginger and turmeric
Add two cups of water and blend until smooth
Put mixture back in a pot, add coconut milk and simmer for 10 minutes
