Cassava Fries Ingredients
- 2 lbs cassava, peeled and cut into 3″ pieces
- 10 cups of water
- 2 cups of vegetable oil
- 2 tbsp paprika
- 1 tbsp rosemary
- 1 tbsp dried thyme
- 1 tbsp black pepper
- 2 tsp salt
Method:
- Bring water to a rolling boil in a pot
- Add a pinch of salt to water then add cassava, boil for 8 minutes
- Drain boiled cassava
- Heat oil in a frying pan or wok
- Fry cassava until golden brown
- Mix dried herbs and spices together
- Toss cassava in spice blend while still hot
Curry Mustard Ingredients
- 1 cup Swiss Mayonnaise
- 2 tbsp Swiss Mustard
- 2 tbsp curry powder
- 2 tbsp honey or agave (or 2 tbsp sugar)
Method:
- Combine ingredients in a bowl
- Mix thoroughly
- Serve with cassava fries
