Tomato & Basil Puttanesca

This Tomato & Basil Puttanesca combines different flavor components to create a magnificent medley of deliciousness.

Ingredients

  • 2 tins Brunswick Tomato & Basil Sardine Fillets
  • 1 pack or 400g Spaghetti cooked
  • 6 tomatoes peeled
  • 5 cloves garlic minced
  • 1 large onion chopped
  • 3 tbsp capers chopped
  • cup olives sliced
  • ½ cup parsley chopped
  • 2 tbsp basil chopped
  • 1 tsp red pepper flakes
  • ¼ cup olive oil
  • ¼ cup hot water
  • salt and black pepper to taste

Instructions

  • Add olive oil to a pot then add garlic and red pepper flakes, sauté on medium/low heat for 1 minute or until garlic is fragrant.
  • Add onions and sardines then continue to sauté for 2 to 3 minutes.
  • Add tomatoes to the pot, making sure to mash them into smaller bits in the pot.
  • Add hot water then continue to sauté for 5 minutes on medium/low heat.
  • Add capers, olives and basil to the pot then season with salt and black pepper to taste.
  • Add cooked spaghetti to the pot.
  • Remove from heat then add fresh parsley.
  • Serve with freshly cracked black pepper.
  • Enjoy!
