Festive Rice

INGREDIENTS:

  • 2 cups Cuisine® parboiled rice
  • 2 medium sweet peppers (red and green)
  • 1 medium red onion
  • 1 can Cuisine® corn
  • 1 cup Cuisine® raisins
  • 2 Pimento peppers
  • 2 tsp Spice blend ( paprika,dry basil,dry parsley,salt and black pepper)
  • 1 Celery stalk
  • 2 tbsp Cuisine® Soya bean oil

METHOD:

  • Bring a pot of water to boil
  • Cook the rice Note: ( Do not boil the rice too soft as it will still be cooked later on)
  • Cut all the vegetables into small dice and source all the spices and herbs needed.
  • To a hot pot add oil and allow to be heated.
  • Sauté all the vegetables (except the corn and raisins )cook for about 2-3 minutes.Note : ( Do not over cook the vegetables as we still want that crunch factor added to the dish)
  • Place rice into the pot along with the herbs and spices.
  • Fold all the ingredients together and taste for salt and pepper.
  • Serve and enjoy!
