Ocean Spray Festive Rice Pilaf

Add a lil #TouchofOceanspray this Christmas with our Ocean Spray Craisins Festive Rice Pilaf. This one is definitely for all the rice lovers out there. This dish is so fragrant with the use of the cardamom and cinnamon but also very tasty and is a great way to use that leftover turkey or ham. Ocean Spray Festive Rice Pilaf

Ingredients:

  • 1 cup Ocean Spray Craisins
  • 2 cups leftover/cooked Ham or Turkey (chopped)
  • 3 cups parboiled rice
  • 1 carrot (diced)
  • 1 onion (finely chopped)
  • 5 cloves garlic (minced)
  • 1” piece ginger (minced)
  • 1 scotch bonnet pepper (optional)
  • ¾ cup whole kernel corn
  • 1 sweet pepper (diced)
  • 3 celery stalks (finely chopped)
  • 4 sprigs thyme
  • 1 tsp all spice/pimento berries (crushed)
  • 1 cinnamon stick
  • 4 cardamom pods
  • 2 bay leaves
  • 3 cups water or chicken stock
  • Oil for sautéing
  • Salt & black pepper (to taste)

Method:

  1. Add oil to a pot on medium/high heat
  2. Add onions then sauté for 1 minute or until translucent
  3. Add ginger, garlic, carrot, celery and all spice. Season with salt and black pepper then sauté for 2 minutes
  4. Add rice, cinnamon, cardamom and bay leaves then allow rice to cook for 3 minutes
  5. Add corn, sweet pepper, ham/turkey and Ocean Spray Craisins to the pot
  6. Add water/chicken stock, two sprigs of thyme and scotch bonnet pepper then season with salt to taste
  7. Cover pot then allow to cook for 12 minutes on low heat
  8. Turn off heat then allow the rice to continue to steam for another 5 minutes
  9. Add remaining thyme to the rice to finish
  10. Serve & Enjoy
