Guinness Goat Stew

Baidawi reveals the latest iteration of his Guinness Goat Stew recipe. This goat stew combines the bold flavors of Guinness with aromatics, herbs a bit of a spicy kick from a scotch bonnet pepper and a homemade spice blend that takes this dish to a whole other level. Guinness Goat Stew

Ingredients

  • 2 lbs fresh goat
  • 2 large onions diced
  • 8 cloves garlic minced
  • 2 tbsp grated ginger
  • 2 bundles celery chopped
  • 2 bundles chives chopped
  • 1 scotch bonnet pepper chopped
  • 2 sweet peppers diced
  • 1 tbsp roucou
  • 1 tbsp coriander seeds
  • 1 tbsp whole geera
  • 1 tbsp all spice
  • 1/2 cinnamon stick
  • 2 bottles Guinness
  • 6 – 8 cups of water
  • salt & black pepper to taste

Guinness Goat Stew

Method

  1. Toast spices then grind them in a mortar and pestle
  2. Add ginger, garlic, spice blend and herbs to fresh goat
  3. Season with salt & black pepper to taste then massage goat until all pieces are fully coated
  4. Saute onions for 12 minutes on medium to low heat then remove from pot
  5. Add goat and saute on high heat for 5 minutes
  6. Add scotch bonnet pepper and onions, combine well then cover and allow to simmer for 10 minutes
  7. Add roucou then deglaze pot with Guinness, cover then allow to simmer for 30 minutes
  8. Add 6 cups of water then cover and allow to simmer on low heat for 1 1/2 hours
  9. Keep checking on goat every 30 minutes, add a cup of water if the liquid evaporates
  10. Once goat is cooked until fork tender add sweet peppers and continue to cook for 1 minute
  11. Serve Guinness Goat Stew with your favorite sides and enjoy
