Steamed Fish & Pumpkin Rice

Equipment

  • Banana leaves (cut and washed)
  • Twine or string

Ingredients

Pumpkin Rice

  • 2.5 cups diced pumpkin
  • 2 cups rice
  • 5 cloves of garlic minced
  • 2 springs of thyme
  • 2 pimentoes
  • 2 tsp rouku
  • 1 large onion diced
  • 1/2 pack coconut milk powder
  • 1 cinnamon stick
  • 1 Bay leaf
  • Salt and pepper to taste

Steamed Fish

  • King Fish steaks
  • Sliced onions
  • Sliced pimento
  • Garlic
  • Ochro
  • Patchoi chopped
  • Thyme
  • Shandon benni
  • Celery
  • Fish sauce
  • Salt and pepper to taste

Instructions

Pumpkin Rice Method

  • In a large pan saute onions until clear and aromatic
  • Add in pumpkin, thyme, garlic, pimento, cinnamon and Bay leaf
  • Stir together and cover the pot and allow the mixture to simmer
  • When pumpkin seems half cooked add in rice and toast with the rest of the ingredients.
  • Add in water, rouku and coconut powder and allow to simmer while covered. (check and stir periodically)
  • When all water is burnt out switch pot off and leave covered for about 10 minutes before serving.

Steamed Fish Method

  • Wash and prepare fish. Season with salt, fish sauce and black pepper
  • Start with a banana leaf and put some patchoi in the center. Place fish on top and layer on a few pieces of each of the items on top (onion, garlic, shadon benni, celery, thyme, pimento, ochro)
  • Wrap banana leaf around the fish and vegetables and secure it with a piece of string.
  • Steam in a steamer or pot with boiling water for 30 minutes approximately.
  • Carefully remove and serve.
