Veggie Lasagna

Whether you’re a vegetarian of meat lover, if you like lasagna you’ll love this veggie lasagna recipe. Assorted vegetables like carrot, zucchini, eggplant and mushrooms add great texture and flavor to the dish. Creamed dasheen bush with goat cheese is also layered into this lasagna, giving it a unique twist!

The Perfect Veggie Lasagna

This veggie lasagna recipe is an amazing blend of vegetables, aromatics, herbs and spices.

Ingredients

Sautéed Vegetables

  • 3 Zucchinis diced
  • 3 Eggplants diced
  • 1 Carrot diced
  • 2 lbs Mushrooms chopped
  • 1 Onion diced
  • 6 cloves Garlic minced
  • 1 tsp Red Chilli Flakes
  • 4 tbsp Olive Oil extra virgin
  • Salt to taste

Creamed Dasheen Bush

  • 1 bundle Dasheen Bush chopped/shredded
  • 3 cloves Garlic minced
  • 1 ½ cups Coconut Milk
  • 1 lb Goat Cheese room temperature
  • ¼ tsp Nutmeg freshly grated
  • Salt to taste
  • 2 tbsp Olive Oil extra virgin

Tomato Sauce

  • 800 grams Whole Canned Tomatoes
  • 1 Onion diced
  • 4 cloves Garlic minced
  • ½ bundle Fresh Basil
  • 1 ½ tsp Whole Fennel Seeds
  • 2 tbsp Olive Oil extra virgin
  • Salt to taste

Lasagna

  • 1 box Roma Lasagna Sheets
  • 3 cups Shredded Mozzarella

Instructions

Sautéed Vegetables

  • Heat up oil in a pot then add onion and carrots.
  • Sauté for 3 to 4 minutes.
  • Add remaining ingredients then combine well.
  • Season with salt to taste.
  • Cook for 5 minutes

Creamed Dasheen Bush

  • Add oil to a pan then add garlic.
  • Sauté for 30 seconds.
  • Add Dasheen bush then continue to cook for 5 minutes on medium/low heat, constantly stirring ingredients.
  • Add coconut milk, nutmeg and salt then cook until reduced.
  • Mix in goat cheese until fully combined.

Tomato Sauce

  • Add oil to a pot then sauté onions and fennel for 4 to 5 minutes.
  • Add canned tomatoes, basil and salt then simmer until sauce begins to thicken.
  • Remove from heat then blend to desired consistency.

Cooking Lasagna Sheets

  • Bring water in a pot to a rolling boil.
  • Season with a pinch of salt then add lasagna sheets.
  • Cook for 4 minutes then drain and set aside.

Lasagna Assembly

  • Add a layer of sauce to the bottom of the baking dish.
  • Add a layer of lasagna sheets.
  • Add a layer of vegetables.
  • Add a layer of tomato sauce.
  • Add a layer of lasagna sheets.
  • Add a layer of creamed dasheen bush & goat cheese mixture.
  • Add layer of vegetables.
  • Repeat sequence until baking dish is full.
  • Top with shredded mozzarella for final layer.

Baking Lasagna

  • Cover lasagna with foil.
  • Place lasagna in a preheated oven at 350° for 30 minutes.
  • Remove foil then bake lasagna for an additional 20 minutes.
  • Allow to cool before serving.
