Cassava is definitely one of my favorite ground provisions. Sauteed Cassava is a side dish that I would get any time I bought food at The Breakfast Shed. This recipe is an attempt to recreate that dish. It is a fairly quick and easy way to whip up an excellent vegan side to pair with your favorite legume or meat.
Sauteed Cassava
Ingredients
- 2 lbs cassava
- 2 cloves of garlic minced
- 1 large onion julienne
- 3 pimentos julienne
- 1 sweet pepper julienne
- 1 cup carrots julienne
- 3 sprigs of fine thyme
- salt & black pepper to taste
Instructions
- Peel cassava, cut into 2 inch pieces
- Boil in salted water for 15 minutes or until tender but not mushy
- Saute onion, garlic, pimento, sweet pepper and carrots on high heat for 1 minute
- Toss with cooked cassava
- Season with salt and black pepper to taste
- Add fresh thyme
- COmbine and enjoy!
