Sauteed Cassava

Ingredients

  • 2 lbs cassava
  • 2 cloves of garlic minced
  • 1 large onion julienne
  • 3 pimentos julienne
  • 1 sweet pepper julienne
  • 1 cup carrots julienne
  • 3 sprigs of fine thyme
  • salt & black pepper to taste

Instructions

  • Peel cassava, cut into 2 inch pieces
  • Boil in salted water for 15 minutes or until tender but not mushy
  • Saute onion, garlic, pimento, sweet pepper and carrots on high heat for 1 minute
  • Toss with cooked cassava
  • Season with salt and black pepper to taste
  • Add fresh thyme
  • COmbine and enjoy!
