Ingredients

lbs
cassava
2
cloves
of garlic
minced
1
large onion
julienne
3
pimentos
julienne
1
sweet pepper
julienne
1
cup
carrots
julienne
3
sprigs of fine thyme
salt & black pepper
to taste
Instructions
Peel cassava, cut into 2 inch pieces
Boil in salted water for 15 minutes or until tender but not mushy
Saute onion, garlic, pimento, sweet pepper and carrots on high heat for 1 minute
Toss with cooked cassava
Season with salt and black pepper to taste
Add fresh thyme
COmbine and enjoy!
