Bake & Shark

For the Friday evening installment of our Quarantine Cooking #StayHome & Cook #WithMe series I thought it would be cool to do one of the most popular street food sandwiches in Trinidad & Tobago, Bake & Shark. Usually people would be able to visit the food strip around the Queens Park Savannah on a Friday evening and get their favorite street foods but the current situation with the global pandemic coronavirus mean until further notice, people cannot congregate in areas like this to purchase meals. So with my flour on hand and a timely delivery of shark from Market Movers I was able to bring the savannah vibes to my kitchen and execute a tasty bake and shark for the live stream.

Bake & Shark Recipe

Ingredients – Bake

  • 3 cups flour
  • 1 cup water
  • 1 tsp baking powder
  • 1 tsp yeast
  • 1/4 tsp salt
  • 1/4 tsp sugar

Bake Method

  1. Combine dry ingredients in a bowl
  2. Add water and mix until a ball of dough is formed
  3. Knead lightly on a floured surface for 3-4 minutes until smooth
  4. Allow to rest for 20 minutes
  5. Divide into handfuls and roll into balls
  6. Using a rolling pin, roll out on a floured surface into 4″ discs
  7. Fry in a deep frying pan or a wok for 30 – 45 seconds.
  8. Use a slotted spoon to bathe the top of the bake with hot oil so the top cooks evenly with the bottom
  9. Drain excess oil and wrap fried bakes in a kitchen towel

Ingredients – Shark

  • 1 lb shark fillet cut into strips
  • 2 tbsp garlic powder
  • 2 tbsp onion powder
  • 2 tbsp black pepper
  • 2 tbsp paprika
  • 1 tbsp dried thyme
  • 1 1/2 cups flour
  • 1/3 cup lemon or lime juice
  • 2 blades of chive finely chopped
  • 2 shadon beni leaves finely chopped
  • salt to taste

Shark Method

  1. Drain liquid completely from shark
  2. Add lemon/lime juice
  3. Mix 1 tbsp of garlic powder, onion powder, black pepper & dried thyme together then add to shark
  4. Add shadon beni and thyme
  5. Season with salt to taste and mix thoroughly
  6. Allow to marinate for at least 30  minutes (overnight is best)
  7. Mix 1 tbsp garlic powder, onion powder, paprika, black pepper and salt to taste to flour
  8. Combine well
  9. Drain liquid from shark then dredge in seasoned flour mixture
  10. Fry in oil over medium heat for 2 minutes or until golden brown


Ingredients – Tamarind Sauce

  • 1/4 cup tamarind paste
  • 2 cups water
  • 1/2 cup sugar
  • 1 tbsp masala powder

Tamarind Sauce Method

  1. Add tamarind paste and water to a saucepan
  2. Bring to a simmer then add sugar and masala
  3. Cook until reduced to a thick sauce

Ingredients – Mmhmm Sauce

  • 1/4 cup mayonnaise
  • 2 tbsp mustard
  • 1 tsp paprika
  • 1 tbsp garlic powder
  • 1 tsp dried thyme
  • 1 tsp black pepper
  • 1 tsp sugar

Mmhmm Sauce Method

  1. Combine well.

Serve bake and shark with lettuce and shredded cabbage. Dress with tamarind sauce, mmhmm sauce and pepper sauce.
