Ingredients
Guava BBQ Sauce
- 1 Tbsp of Oil
- 1 Tsp of Minced Garlic
- 2 Tbsp of Minced Onions
- 1 Bay Leaf
- 1 Oz Dark Rum
- ¼ Cup of Guava Jam
- ¾ Cup BBQ Sauce
- ¼ Tsp Paprika Powder
- ¼ Tsp Cumin Powder Geera
- ¼ Tsp Cayenne Powder
- ¼ Tsp Salt
- 4 Dashes of Angostura Orange Bitters
Wings Marinade
- 6 Wings cut into halves
- 1 Tsp Salt
- ¾ Tsp Freshly Cracked Black Pepper
- ½ Tsp Cumin Powder Geera
- ½ Tsp Paprika Powder
- ½ Tsp Cayenne Powder
- 1 Tbsp of Minced Chadon Beni
Breading
- 2 Cups of Flour
- 1 Egg
- 1 Cup of Milk
Instructions
- Place wings into a bowl and season with spices and the chadon beni, ensuring to rub it all over the surface area of the wings. Let Sit for 15 minutes or up to overnight to marinate.
- Prepare sauce, placing small sauté pan over medium heat and adding the oil. Sauté the onions and garlic for 2 minutes then add the bayleaf. Add the dark rum and flambé.
- Place guava jam inside and cook until liquefied. Add the Bar B Que Sauce and other spices and stir to combine. Let simmer for 4 to 5 minutes then remove from the heat and stir in the Angostura bitters.
- To fry the chicken wings, add sufficient oil to a sauce pan and place on medium to high heat .
- Meanwhile, dip the pieces of wings into the flour then the egg wash and back into the flour finally. Dust off any excess flour and place in hot oil to fry for approximately 4 minutes or until cooked.
- When done, place the fried wings into a bowl, and spoon some of the Guava sauce atop. Toss to evenly coat the wings.
- Place Guava Glazed wings onto a serving palter and enjoy while hot.
