If you’re a lover of tea then you will love this Chai Cake Recipe. This cake is filled with warm whole spices as well as the intense but by no means overpowering flavor of Angostura Aromatic Bitters. This recipe is the perfect snack to have with a cup of your favorite hot beverage.
Chai Cake
Ingredients
- 275g butter
- 362g sugar
- ⅔ tsp salt
- 450g cake flour
- 18g baking powder
- 6.75oz eggs
- ¼ tsp clove powder
- ¼ tsp cardamom powder
- ¼ tsp cinnamon powder
- Nutmeg (to taste)
- Angostura Aromatic Bitters
- 10 oz Low fat milk + 2 oz to cater for evaporation during scalding.
- 1 Large bay leaf or 3-4 small bayleaf
- 3 whole clove
- 3 cardamom pods
- ½ cinnamon stick
- 3 allspice/pimento berry
- ½ star anise
- 2 black tea bags of choice (vanilla, apple spice etc.)
Method
- Scald milk with the bayleaf,cardamom, ,cinnamon stick, allspice/pimento berry and star anise. Remove from heat just as milk starts to produce bubbles. Add tea bags to the mixture and cover to let it steep and cool naturally.
- Ensure Butter is at A/C room temperature (approx 19 degrees)
- Sift flour and baking powder and add dry spices; gently mix together until well combined
- Cream butter, sugar & salt with a hand blender or stand mixer for 5-7 minutes
- Add eggs individually, ensuring each egg is fully incorporated and mixture is light and aerated.
- Alternate flour mixture with milk mixture
- When all of the flour mix is incorporated, mix for 30 seconds more, taking care not to overmix the batter.
- Preheat oven temperature to 350°F/180°C
- Pan mixture in desired baking dish (gently but firmly knock dish against work table to release any trapped air bubbles)
- Bake for 30 – 38 mins
- Allow the cake to cool or wire rack after de-panning.
- When fully cooled, frost or decorate as desired
