Spice Buns With Citrus Glaze

Spice Buns with a Citrus Glaze are my idea of a perfect “dessert” type treat especially when enjoyed with some sharp cheddar cheese. There’s something very satisfying about having a soft, warm bun filled with a combination of spices, a sweet, stick, citrusy glaze and a slice of sharp, slightly tangy aged cheddar cheese.

In this recipe, both the Angostura Aromatic Bitters and the Angostura Orange Bitters really shine through to add amazing depth of flavor to the experience. The relationship between these complimenting and contrasting flavors and textures is the perfect harmony.

Spice Buns With Citrus Glaze

Spiced Buns Ingredients

  • 4 cups all purpose flour
  • 1/4 cup brown sugar
  • 2 tsp yeast
  • 1/2 tsp nutmeg
  • 1/2 tsp ginger powder
  • 1/2 tsp cinnamon powder
  • 1/2 tsp salt
  • 1/2 tsp cardamom powder
  • 1 egg (beaten)
  • 1 cup lukewarm milk
  • 1/4 cup vegetable oil or melted butter
  • 1/4 tsp vanilla essence
  • 3 – 4 dashes of Angostura Aromatic Bitters

Method

  1. Add dry ingredients to a bowl then combine well.
  2. Add wet ingredients to a bowl then combine well.
  3. Combine wet ingredients and dry ingredients then bring together until a dough is formed.
  4. Knead dough for approximately give minutes until a smooth dough is formed.
  5. Cover and allow to rest in a warm spot for 45 minutes to 1 hour.
  6. Portion out dough into 10 dough balls.
  7. Form dough balls into buns using the technique demonstrated in the video.
  8. Cover and allow to rest for 25 to 30 minutes.
  9. Bake in a preheated oven at 350 degrees for 18 to 20 minutes or until golden brown.
  10. Transfer buns to a cooling rack then brush with citrus glaze.
  11. Allow buns to cool for at least 5 minutes.
  12. Enjoy with a few slices of sharp cheddar cheese!

Citrus Glaze Ingredients

  • 1/4 cup orange juice
  • 1/2 cup sugar
  • 1 bay leaf
  • 4 – 5 dashes of Angostura Orange Bitters
  • a pinch of salt (to taste)

Method

  1. Add ingredients to a pot or pan then bring to a gentle simmer.
  2. Allow to simmer for 10 to 15 minutes until it begins to reduce.
  3. Remove from heat and allow to cool .
  4. Brush glaze onto buns while they are still hot.
