Stew Beef Steak

The steps behind preparing a good steak are more or less consistent in the culinary world. Season with salt & black pepper, cook in a cast iron skillet with garlic cloves, butter and thyme or rosemary. This Stew Beef Steak recipe take a slightly different approach to seasoning and serving the steaks. The aim is to give them the flavor profile of a delicious Trini stew beef but using “traditional” methods.

For this kitchen experiment I did the regular salt & black pepper seasoning for one steak. Then I created a stew sauce to serve it with to mimic the stew beef experience. The other method was to prepare a stew beef spice rub then cook the steak as you would normally. I found that the stew beef spice rub on the steak resulted in a way more flavorful beef. While the stew sauce provided a delicious gravy.

In this written recipe I am combining the two methods and giving you the best of both worlds in this Stew Beef Steak recipe. If you love steaks, this is definitely one to try!



Stew Beef Steak

Ingredients – Dry Rub

  • 2 tbsp paprika
  • 1 tbsp coriander seeds
  • 2 tbsp brown sugar
  • 1/2 tsp clove powder
  • 1 tbsp scotch bonnet pepper powder or chili powder
  • 1 tbsp black pepper
  • salt to taste

Method

  1. Make sure steak is at room temperature and patted dry
  2. Drizzle steak with a teaspoon of vegetable oil then apply dry rub to both sides
  3. In a hot pan or skillet cook 1″ steaks for 1 minute on either side. If steaks are thicker than 1″ cook for 2 – 3 minutes on one side then cook for 1 minute on the other side
  4. Remove from pan then allow to rest for 5 – 8 minutes

Ingredients – Stew Sauce

  • 1 cup chopped mushrooms
  • 1 onion diced
  • 2 cloves garlic minced
  • 3 sprigs thyme
  • 1 bay leaf
  • 1 tbsp brown sugar
  • 1 tbsp roucou
  • 1 cup coconut milk
  • salt & black pepper to taste

Method

  1. Add brown sugar to pan then caramelize until dark brown in color
  2. Add onion, garlic and mushrooms then sauté for 2 minutes. Season with salt & black pepper to taste
  3. Add roucou, coconut milk, bay leaf & thyme then cook for 5 minutes or until thickened
  4. Remove thyme and bay leaf
  5. Serve with Stew Beef Steaks
  6. Enjoy!
