For this recipe we’ll need
- 2 tbsp of paprika
- 1 tsp cayenne pepper or chilli powder
- 1 tsp salt
- 1 tsp black pepper
- 2 tbsp brown sugar
- 2 tbsp roucou
- 2 bay leaves
- A couple sprigs of thyme
- 1 medium sized onion chopped
- 3 cloves of garlic minced
- 3 tomatoes diced
- 1 lb lean minced beef
I used lean minced beef rather than the regular because it takes less time to cook. When I cook regular minced beef I don’t use any additional oil and I like to cook it for an extended period of time to allow some of the fat to render and infuse more flavour to the dish. Seeing that we’re using lean minced beef I jumped straight into caramelizing the sugar for our stew.
Add your beef when the sugar gets to the browning stage and allow it cook for 1 minute to gain some colour then add your aromatics and herbs, season with your spices then cover and allow to simmer on medium heat for 10 minutes.
Don’t add any additional water to the pot at this stage. Let the steam process do its thing to add moisture and that sauciness that Trinis love in their food.
After about 10 to 10 minutes on medium heat, your stewed minced beef is done. This is a simple recipe that can be tweaked in so many ways. Try different spice combos or add pimentos or carrots for added flavour and volume.
