Cassava is definitely one of my favorite ground provisions, this is a fairly quick and easy way to whip up an excellent vegan side dish to go with your favorite legume or meat.
Ingredients:
2lbs cassava
2 cloves of garlic (minced)
1 large onion (julienne)
3 pimentos (julienne)
1 sweet pepper (julienne)
1 cup carrots (julienne)
3 sprigs of fine thyme
salt & black pepper (to taste)
Method:
Peel cassava, cut into 2 inch pieces
Boil in salted water for 15 minutes or until tender but firm
Saute onion, garlic, pimento, sweet pepper and carrots on medium heat for 1 minute
