Vanilla Sponge Cake

Christine shares her aunt’s recipe for an easy vanilla sponge cake that you can make with the help of a stand mixer in less than one hour.

Vanilla Sponge Cake Ingredients

  • 5 oz butter
  • 1 cup sugar
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 5 oz buttermilk
  • 3 eggs
  • 2 cups cake flour
  • 1 tsp vanilla extract
  • 1/2 tsp almond essence

Method:

  1. Cream butter and sugar for approximately 7 minutes and until pale in color. Use whisk attachment to incorporate more air into batter.
  2. Sift dry ingredients together and set aside while butter & sugar is creaming
  3. Add eggs one at a time to creamed batter ensuring that the eggs do not separate while beating.
  4. Add vanilla extract and almond essence
  5. Add sifted dry ingredients to batter in 3 parts. After each addition of the dry ingredients add one part buttermilk. Start with dry ingredients and end with dry ingredients.
  6. Fold dry ingredients into batter then transfer to a 8″ cake pan.
  7. Bake in a preheated oven at 350 degrees for 20 minutes

Tips

  1. Grease 8″ x 4″ pan then line with grease proof or parchment paper
  2. To make buttermilk add 1 teaspoon of vinegar to 5 ozs of evaporated milk and allow to stand for at least 5 minutes before using
  3. To make homemade cake flour, replace 1 teaspoon of all purpose flour with 1 teaspoon of corn flour for every one (1) cup of flour then combine well.
