Roasted Cranberry Glazed Chicken

Christmas is in the air and that means baking, cooking and lots of eating. The Christmas lunch spread comes with fanfare and is usually planned weeks in advance. But if you’re in a pinch and looking for a main dish that doesn’t require too much pre planning but would still impress, this Roasted Cranberry Glazed Chicken is a sure win!

Using the pan drippings, we add Ocean Spray’s Cranberry Juice along with some warm spices like clove, cinnamon and a bay leaf to create a tart, sweet and flavourful sauce that will be the star of the show.

Roasted Cranberry Glazed Chicken

Ingredients

  • 1 whole chicken
  • 4 tbsp minced garlic
  • 1 tbsp onion powder
  • 2 tsp ginger powder
  • 2 tsp cayenne pepper
  • 2 tsp lemon pepper
  • 1 tbsp sugar
  • 2 sprigs rosemary
  • 5 tbsp unsalted butter
  • salt to taste
  • 1 cinnamon stick
  • 4 grains whole clove
  • 2 bay leaves

Method

  1. Combine garlic, herbs, along with onion powder, ginger powder, cayenne pepper, lemon pepper and butter in a bowl to form a paste
  2. Push a generous amount of the butter/paste underneath the skin of the chicken around the breast
  3. Apply the remaining mixture to the chicken making sure to smother the entire chicken
  4. Place chicken in a roasting tray and cook covered in a preheated oven at 350 degrees for 40 minutes
  5. Drain juices from chicken into a pot then add cranberry juice, bay leaves, cinnamon and whole cloves
  6. Reduce until thickened
  7. Baste the chicken with cranberry glaze
  8. Return to the oven and cook for an additional 8 minutes or until brown.
  9. Use remaining juices to apply a final glaze to the chicken for extra flavor and moisture
  10. Allow to cool for 5 to 10 minutes before carving
  11. Serve & Enjoy
