Roasted Garlic & Tomato Soup

Tomatoes are in season and you can get them for as cheap as $3 per pound depending on where you buy them. This roasted garlic and tomato soup is a great recipe to try if you love tomatoes and can enjoy them in different ways. The addition of the grilled cheese sandwich is an American classic comfort food combo.

Roasted Garlic & Tomato Soup

Ingredients:

  • 3 lbs tomato peeled * check out our tutorial on How To Peel Tomatoes
  • 2 head of garlic
  • 3 bay leaves
  • 1 scotch bonnet pepper
  • 1/4 cup olive oil
  • salt & black pepper to taste

Roasted Garlic Method:

  1. Add garlic to a oven safe dish or pan and cover in olive oil
  2. Roast in a preheated oven for 25 to 30 mins at 350 degrees

Tomato Soup Method:

  1. Add peeled tomatoes to a pot
  2. Add roasted garlic, bay leaves and scotch bonnet pepper
  3. Season with salt and black pepper to taste
  4. Cover and allow to simmer on medium heat for 30 minutes
  5. Add mixture to a blender and puree until smooth
  6. Pass mixture through a sieve and transfer back to pot
  7. Simmer on low heat for 5 minutes
  8. Serve with grilled cheese sandwich or enjoy as is
