Too often I find myself preparing the same go-to meals when I open a can of tuna. I’m either preparing my beloved Stewed Tuna recipe or Tuna Salad for a sandwich. This time I wanted to prepare something different but also a dish that didn’t take too long to prepare or that required any fancy ingredients. These Tuna Meatballs were the perfect thing to whip up. I made it into a meal by adding spaghetti but you could easily eat these with rice, put them in a fried bake or have them on their own with a little tamarind dipping sauce.
Using the Grace flaked Tuna in water made this even easier as I didn’t have to go through the steps of mincing/mashing the tuna. This is definitely an easy dish to add to your seafood recipe repertoire.
Special thanks to Grace for sponsoring this recipe.
Tuna Meatballs with Spaghetti
Ingredients
- 2 cans Grace Tuna Flakes in Water
- 1/2 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 1/4 tsp scotch bonnet pepper (minced) *optional
- 3 pimentos (finely chopped)
- 3 shadon beni leaves (finely chopped)
- 1 tbsp lemon pepper
- 1/3 cup bread crumbs
- 1 medium egg
- 3 tbsp oil for sautéingÂ
The Process
Cut half a medium sized onion
chop finely
add some fresh shadon beni to the mix, you can substitute this with cilantro or dill
chop finely
add pimento peppers or you can substitute this with sweet peppers if you can’t get pimentos
just a little scotch bonnet goes a long way
you can always adjust the spice level to your preference
mince a few cloves of garlic
crushed crackers will work just as good as breadcrumbs, this act as a binding agent for the meatballs
add tuna to the chopped veggies and herbs
add “breadcrumbs”
add lemon pepper
and one egg to also help bind the meatballs
mix well
it’s important to ensure all the ingredients are well combined
use a tablespoon to measure out even portions
form into meatballs by hand
these are ready to go into the frying pan
place into a frying pan with oil
cook until golden then flip, this will take approximately 4 to 5 minutes
gently flip and continue to cook
you can turn them on their sides as well to make sure the entire surface achieves a golden crust
Serve and enjoy!
