Bánh Mì Style Sandwich

Chrisal does her take of the Vietnamese Bánh mì style sandwich using a flavourful Asian stir fry sauce that was a cinch to make and for the crunch, thinly sliced carrots and cucumbers. If you have pickled onions in the fridge, add those in too. She also created a spicy mayo that can also be used to slather on a fried chicken sandwich or as a dip for a veggie platter.

Bánh mì Style Sandwich

Bánh mì style sandwich

INGREDIENTS:

  • 1 medium to large chicken breast cut in strips (can be seasoned using the stir fry sauce or seasoning of your choice)
  • ½ Red Bell Pepper
  • ½ Green Bell Pepper
  • 1 Medium Red Onion
  • ½ Medium Carrot (julienned)
  • 1 medium cucumber sliced thinly on lengthways
  • 2 sub loaves or any bread of your choice

Stir Fry sauce

  • 2 tbsp. soy sauce
  • 1 tbsp grated ginger
  • 1 tbsp grated garlic
  • 1 tbsp rice wine vinegar
  • 1 tbsp honey
  • 2 tbsp of sesame oil (reserve 1 tbsp for the end)
  • 2 tbsp of corn starch liquid (add this last)
  • ½ tbsp red pepper flakes
  • Salt and pepper to taste

Spicy Mayo Spread (Optional)

  • ½ cup of mayo
  • 1 tbsp of chili garlic sauce
  • 1 tbsp of honey
  • ½ tbsp of sriracha
  • Salt and Pepper to taste

METHOD

  1. Turn on the CalmDo appliance or any griddle pan and let it come up to medium to high heat. Drizzle on any vegetable oil and when it starts to ripple, place your chicken breast, being careful not to over crowd the griddle. Flip when meat is released, and grill marks are evident. Set aside.
  2. Add the onions, green and red peppers after the chicken is finished and toss lightly just to soak up the residual drippings left from the chicken. Transfer chicken and veggies into the deep dish of the CalmDo or a work or large pan.
  3. Mix your stir fry ingredients to create the sauce leaving out the corn starch liquid. Also  Add it to the chicken and veggies and toss on high heat. After 2-3 minutes add the corn starch and stir. The sauce will thicken and get glossy.
  4. Turn off heat and drizzle on the remaining sesame oil as some of its flavour would have been lost in the cooking process.
  5. Grill the bread on both side and then assemble!
  6. Enjoy!
