Sponge Cake Recipe
SPONGE CAKE INGREDIENTS:
- 2 cups granulated sugar
- 1 cup butter
- 4 eggs
- 2 tsp. vanilla essence
- 1/2 lime zest
- 1 tbsp. lemon juice
- 1 cup cuisine evaporated milk
- 3 cups cuisine purpose flour
- 1/2 tsp. baking soda
- 1/2 tsp. baking powder
- 1 tsp.cinnamon
- 1 tsp. nutmeg
- 1/2 tsp. salt
METHOD:
- Grease and flour a 9″ cake pan.
- Sift together the flour, baking powder, baking soda,cinnamon ,nutmeg and salt.
- Cream sugar and butter until smooth. Note:(This process takes a while around 25 minutes or more depending on what kind of mixer you use.Make sure to cream until light and smooth as it helps with the texture of the cake.)
- Beat the eggs adding them one at a time.
- Mix the lime juice and milk.
Add a 1/3 of the creamed mixture and 1/3 of the milk mixture to the flour. Continue adding gradually until everything is well combined. Note: ( keep on a low speed) - Beat in the vanilla essence and zest lime. Note: (make sure to get all the sides and at the bottom of the bowl)
- Pour into greased pan and bake in a 350 degrees Fahrenheit.
- Test with a knife or skewer by inserting in the center of the cake, when it comes out clean the cake is done.
- Allow to cool for 10 minutes and remove from pan.
- Serve and enjoy
