BBQ Lime 

As we close off season 3 I thought it would be fitting to have a lime. Food always brings people together and Barbeque is just one of those dishes that puts a smile on everyone’s face. Simple dishes with a comforting flavour. The ribs fall off the bones and the sauce is sticky and tasty making them irresistible. The sides are great additions to the meal as there is something for everyone. Kebabs are playful and so easy to make. Perfect for the vacation time. Hope you try these delicious recipes and enjoy it as much as I did.

Ingredients

Barbecue Sauce

  • 1 Onion- Small diced
  • 4 Cloves Garlic-Minced
  • ¾ C Honey
  • 1 ½ C Cuisine Brown Sugar
  • 1/3 C Worcestershire Sauce
  • 1/3 C Soy sauce
  • 2 C Ketchup
  • ½ C Mustard
  • ½ C Cider vinegar
  • ¼ C Lemon juice
  • ¼ C Steak Sauce
  • ¼ C Molasses
  • 2 tbsp Chili flakes
  • 12 Dashes Angostura bitters
  • 3 tbsp Cuisine Soya-bean oil
  • Salt- to taste
  • Black pepper-to taste

Pork Ribs

  • 1 Full rack Pork ribs-cleaned
  • ¾ C Cuisine Succulent Burger seasoning
  • 1/2C Brown Sugar

Potato Salad

  • 1lb Potato –washed and cubed
  • 1 tbsp Cuisine Brown Sugar
  • ½ C Mayonnaise
  • 2 cans Cuisine Peas and Carrots
  • Salt- to taste
  • Black pepper- to taste

Garlic Bread

  • 2 baguette breads
  • 1 Bundle fresh Parsley – finely chopped
  • 10 Garlic cloves-minced
  • ¾ C Butter
  • Salt- to taste
  • Black pepper – to taste

Grill corn

  • 3 packs Pre-boiled Corn
  • 1 C Butter
  • 1 bundle Fresh Parsley
  • 10 Garlic cloves -minced

Chicken Kebabs

  • 2 eggplants -medium diced
  • 3 Sweet peppers – medium diced (Orange and Green)
  • 4 Tomatoes –medium diced
  • 3 Red onions -medium diced
  • 1lb Chicken breast –cleaned and small cubes
  • 4 C Yogurt
  • 3 Tbsp Paprika
  • 8 Garlic cloves-minced
  • 1 C Cuisine Soya-bean Oil
  • Salt- to taste
  • Black pepper- to taste
  • 15 Skewers

Vegetable Kebabs

  • 3 Eggplants – medium diced
  • 2 Zucchini- medium diced
  • 5 Tomatoes – medium diced
  • 3 Sweet peppers- medium diced
  • 3 White Onions- medium diced
  • 8 Garlic cloves-minced
  • 1 C Cuisine Soya-Bean Oil
  • Salt – to taste
  • Black pepper- to taste
  • 15 Skewers

Roasted Peppers

  • 1 bag “Sweet” Bell peppers
  • 3 tbsp Cuisine Soya-bean Oil
  • Salt- to taste
  • Black pepper- To taste

Method

Pork

  1. Preheat oven at 350 degrees.
  2. Rub Cuisine dry seasoning and sugar onto the pork making sure it’s fully coated. Next cover with foil. Wrap the meat twice then place into the oven for 90 minutes.
  3. For the sauce heat oil in a medium pot. Sauté onion until caramelized then add garlic and chili flakes.
  4. In a bowl mix together all the remaining items for the sauce. Whisk well and then add to the pot. Allow the mixture to be reduced by half. Note: (Mixture should be thick.)
  5. Once the pork is finished in the oven place onto the grill to get some grill marks. After coat with the sauce and keep on the grill for another 15 minutes.

Potato Salad

  1. Boil potatoes until tender.
  2. Whisk the mayonnaise and the brown sugar until the sugar has been in cooperated.
  3. Add the potatoes and Cuisine peas and carrot. Mix well then add salt and black pepper to your liking.

Garlic Bread

  1. Melt butter and add the garlic, parsley salt and black pepper. Mix well.
  2. Slice bread at an angle and spread the garlic butter into the bread.
  3. Place into the grill until golden brown.

Grill corn

  1. Melt butter and add the garlic, parsley salt and black pepper. Mix well.
  2. Coat corn with garlic butter and place into the grill until charred.

Chicken Kebabs

  1. Season the chicken with yogurt, salt, black pepper, paprika and garlic. Rub well and allow to marinate over night.
  2. Assemble the skewers by placing chicken and vegetables in a colourful order.
  3. Drizzle oil, salt and black pepper into the kebabs and place into the grill for 12 minutes. Note: (Be sure to check the chicken and vegetables making sure its fully cooked before removing from the grill. )

Vegetable kebabs

  1. Coat the vegetables with salt, black pepper and garlic making sure its fully coated.
  2. Assemble the skewers by placing the vegetables in a colourful order.
  3. Drizzle oil and place onto the grill for 10 minutes.

Roasted Peppers

  1. Drizzle oil, salt and black pepper into the peppers and rub well.
  2. Place onto the grill for 8 minutes.
