We’re lucky to have a service like Market Movers around so we can get our weekly dose of fresh fruits and vegetables. I had no real method to my last order, I just randomly picked different items and was able to throw together this apple kale salad in no time. So this post isn’t so much about a recipe but rather an approach. If you add fresh fruit and vegetables to your shopping list then you’ll be well equipped to create one of these “raid de fridge” specials. Not to mention, you can utilize other Pantry Essentials and add even more vibes to this salad. Open a can of chick peas and make Falafel to easily take this salad to the next level.
Apple Kale Salad – Ingredients
- 1 bundle of kale
- 1 granny smith apple sliced
- 1 red onion julienne
- 2 cloves of garlic minced
- 2 tomatoes cut into quarters
- 1/4 cup chopped almonds
- 2 tbsp olive oil
- 1/2 lemon
- salt & black pepper to taste
Method
- Remove kale leaves from stems and place in a large bowl
- Add olive oil to kale then toss
- Add onion, garlic and apple
- Squeeze in the juice of the lemon
- Season with salt & black pepper
- Toss well
- Enjoy
