These coffee streusel muffins are the perfect “pick-me-up” snack. This easy muffin recipe uses coffee in the batter as well as the cream frosting and is finished off with a drizzling of melted chocolate and cocoa nibs.
Measure and sift flour into a large bowl
Add in brown sugar and spices
Sprinkle on the Nescafe Gold
Crack eggs into a separate bowl, one at a time.
Stir until combined into a smooth batter.Do not over mix!
Use a scoop or a spoon to add some of the muffin batter to a greased and floured muffin tin.
Sprinkle on a generous serving of the streusel
Make an intense coffee mixture with some lukewarm water and 2 tablespoons of Nescafe Gold
Whip until soft peaks and refrigerate until you are ready to top.
The muffins can then be drizzled with melted chocolate or topped with cocoa nibs or chocolate chips for some extra sweetness!
