Peruvian Food Festival at Hyatt Trinidad

The Peruvian Food Festival hosted at the Hyatt Regency Trinidad is more than experiencing the amazing cuisine of Peru. This festival is also a showcase of Peruvian produce. The ultimate goal is to promote trade and food security within the region.

Peruvian cuisine is a unique blend of indigenous ingredients and techniques combined with influences from Europe, Asia and Africa.

Ambassador David Malaga welcomed us to the Peruvian Food Festival and spoke about using food and culture as tools to strengthen ties between Peru and Trinidad and Tobago.

Sous Chef, Kirk Seegobin took us through the menu and explained some of the base flavors of Peruvian cuisine. The Aji Amarillo is the most popular pepper in Peruvian cuisine. This pepper while spicy also has a very fruity taste. Many of the dishes on the menu used the Aji Amarillo, similar to the way many of our local dishes use pimento peppers.

Chef Maria Rosa Vasquez Chavez

Chef Maria Rosa Vasquez Chavez is world renowned and has been representing Peru in the culinary field for many years. She joined us to explain some of the dishes on the menu but also to share her knowledge of Peruvian cuisine. One thing that stood out was that Peru has the widest variety of potatoes with over 4000 different types. It would be amazing to be able to purchase some of those varieties in our local markets.

Of course I had to fix myself a plate or two. My first one was the fish stew with vegetables, baby lima beans with bacon along with the fried quinoa with eggs and mixed mushrooms.

My second plate was the roasted pork belly, cassava fries, pan frances with the corilla salad, rocoto sauce and yellow chili sauce.

In addition to the food, we were also treated to a taste of Peruvian culture with music and dancing.
