I hope you looked at my video where I highlighted some Essential Spices to stock your pantry with. This Tandoori Chicken Burger is a smoky and spicy patty served on a homemade burger bun with fresh lettuce, pickled red onions and a creamy curry mustard.
For this recipe I created a tandoori spice blend. My condiment of choice is a simple curry mustard that is the perfect compliment for this burger.
Ingredients
Chicken Patties:
- 2 kgs Minced Chicken
- 1 Tbsp Cardamom
- 1 Tbsp Coriander Seeds
- 1 Tbsp Methi or Fenugreek
- 1 Tbsp Whole Geera or Cumin
- 1 Tbsp Black Peppercorns
- 1 Tbsp Cayenne Pepper
- 5 Tbsp Paprika
- 6 Cloves of garlic minced
- 1 Bundled of Shadon Beni finely chopped
- Salt to taste
Curry Mustard:
- 1 Cup of Mayonnaise
- 1 Tbsp Curry Powder
- 1 Tbsp Mustard
Instructions
Chicken Patties:
- Toast spices (cardamom, coriander seeds, methi, geera and black pepper corns) until the spices start to pop and release their aroma.
- Grind the spices into a powder using a mortar and pestle or spice grinder.
- Combine with paprika and cayenne pepper.
- Season minced chicken with salt, garlic, shadon beni and tbsp of tandoori spice blend.
- Combine well and allow to marinate for at least one hour
- Apply some oil to your hands and form the meat into 1/2" thick patties
- Cook on a medium heat for 8 minutes on one side then flip and allow to cook for 2 - 3 minutes
Curry Mustard:
- Add mayo, curry powder and mustard to a bowl and combine well.
