Tandoori Chicken Burger

I hope you looked at my video where I highlighted some Essential Spices to stock your pantry with. This Tandoori Chicken Burger is a smoky and spicy patty served on a homemade burger bun with fresh lettuce, pickled red onions and a creamy curry mustard.

For this recipe I created a tandoori spice blend. My condiment of choice is a simple curry mustard that is the perfect compliment for this burger.

Ingredients

Chicken Patties:

  • 2 kgs Minced Chicken
  • 1 Tbsp Cardamom
  • 1 Tbsp Coriander Seeds
  • 1 Tbsp Methi or Fenugreek
  • 1 Tbsp Whole Geera or Cumin
  • 1 Tbsp Black Peppercorns
  • 1 Tbsp Cayenne Pepper
  • 5 Tbsp Paprika
  • 6 Cloves of garlic minced
  • 1 Bundled of Shadon Beni finely chopped
  • Salt to taste

Curry Mustard:

  • 1 Cup of Mayonnaise
  • 1 Tbsp Curry Powder
  • 1 Tbsp Mustard

Instructions

Chicken Patties:

  • Toast spices (cardamom, coriander seeds, methi, geera and black pepper corns) until the spices start to pop and release their aroma.
  • Grind the spices into a powder using a mortar and pestle or spice grinder.
  • Combine with paprika and cayenne pepper.
  • Season minced chicken with salt, garlic, shadon beni and tbsp of tandoori spice blend.
  • Combine well and allow to marinate for at least one hour
  • Apply some oil to your hands and form the meat into 1/2" thick patties
  • Cook on a medium heat for 8 minutes on one side then flip and allow to cook for 2 - 3 minutes

Curry Mustard:

  • Add  mayo, curry powder and mustard to a bowl and combine well.

Serve on hamburger buns of your choice with fresh lettuce and pickled red onions for a fresh bite.
