Tandoori Chicken Burger

Chicken Patties:
- 2 kgs Minced Chicken
- 1 Tbsp Cardamom
- 1 Tbsp Coriander Seeds
- 1 Tbsp Methi or Fenugreek
- 1 Tbsp Whole Geera or Cumin
- 1 Tbsp Black Peppercorns
- 1 Tbsp Cayenne Pepper
- 5 Tbsp Paprika
- 6 Cloves of garlic minced
- 1 Bundled of Shadon Beni finely chopped
- Salt to taste
Curry Mustard:
- 1 Cup of Mayonnaise
- 1 Tbsp Curry Powder
- 1 Tbsp Mustard
Chicken Patties:
Toast spices (cardamom, coriander seeds, methi, geera and black pepper corns) until the spices start to pop and release their aroma.
Grind the spices into a powder using a mortar and pestle or spice grinder.
Combine with paprika and cayenne pepper.
Season minced chicken with salt, garlic, shadon beni and tbsp of tandoori spice blend.
Combine well and allow to marinate for at least one hour
Apply some oil to your hands and form the meat into 1/2" thick patties
Cook on a medium heat for 8 minutes on one side then flip and allow to cook for 2 - 3 minutes
Serve on hamburger buns of your choice with fresh lettuce and pickled red onions for a fresh bite.
