This was supposed to be my very first dessert recipe on MmHmm but I decided to create something versatile that can be used in different dessert inspired applications. This passion fruit butter which is actually very similar to a custard is definitely something you need to try.
1/2 cup passion fruit pulp or juice
1/2 cup granulated sugar
4 large eggs
1 cup of butter
2 bay leaves
2 tbsp lemon juice
Grind granulated sugar until powdery using a coffee grinder, food processor or blender.
Lightly beat 4 eggs, combine with passion fruit juice and set aside
In a pot bring some water to a boil then reduce to medium heat and place a bowl over the pot. Ensure the bowl is not touching the water.
Add your butter and sugar, stir until it begins to melt
Add bay leaves, cloves, egg and passion fruit mixture and lemon juice
Keep stirring with a wooden spoon until it thickens. This should take about 10 minutes or until the mixture is coating the spoon.
Allow to cool to room temperature
Enjoy right away or store in a sterilized container (keep refrigerated)
