Passion Fruit Butter

Learn to make homemade passion fruit butter. A tropical curd that's the perfect balance of tart and sweet to use for desserts or as a spread.

Ingredients

  • ½ cup passion fruit pulp or juice
  • ½ cup granulated sugar
  • 4 large eggs
  • 1 cup of butter
  • 2 bay leaves
  • 5 cloves
  • 2 tbsp lemon juice

Instructions

  • Grind granulated sugar until powdery using a coffee grinder, food processor or blender.
  • Lightly beat 4 eggs, combine with passion fruit juice and set aside
  • In a pot bring some water to a boil then reduce to medium heat and place a bowl over the pot. Ensure the bowl is not touching the water.
  • Add your butter and sugar, stir until it begins to melt
  • Add bay leaves, cloves, egg and passion fruit mixture and lemon juice
  • Keep stirring with a wooden spoon until it thickens. This should take about 10 minutes or until the mixture is coating the spoon.
  • Allow to cool to room temperature
  • Enjoy right away or store in a sterilized container (keep refrigerated)
