Fun fact, the second video uploaded to our YouTube channel is a Geera Chicken “recipe” by yours truly. Part of me wants to delete that video from the channel but I think it’s important to show how far we have come with the quality of our content. Geera chicken is the perfect cutters or liming food when you’re drinking. Something about the warmth of toasted geera, the savory flavors and the heat from the pepper just goes so well with a cold beer.
When we say Geera Chicken in Trinidad & Tobago most times we are actually referring to masala chicken and that’s because a lot of geera recipes use masala blends in them which is more than just the geera spice. For my geera chicken, I only use geera. Whole geera at that, no pre-ground or pre-roasted geera. To achieve maximum flavor we need to deal whole geera that we will be toasting.
