There’s nothing quite like a steaming bowl of fish broth on a Saturday morning after a Friday night of heavy liming. Something about a spicy, steamy bowl of fish broth packed with nutrients and flavor just brings you back to life. We take our time and build flavors with this one to deliver an awesome final product. Fish Broth
Ingredients
- 2lbs fish (including fish head or fish tail)
- 2 cups pumpkin cubed
- 1 large onion diced
- 10 cloves garlic
- 8 pimentos
- 2″ piece ginger
- 1 bundle chadon beni
- 1 bundle celery
- 1 bundle chives
- 1 scotch bonnet pepper
- 3 limes
- 4 tomatoes diced
- 1 potato cubed
- 1 carrot diced
- 1 cup dasheen cubed
- 8 ochroes
- 1 tbsp roucou
- 2 tbsp butter
- 2 tbsp oil
- 8-10 cups water
Method
- Place garlic, ginger, pimento, scotch bonnet pepper and herbs into a food processor then blend into green seasoning.
- Add the juice of one lime and salt to taste to the green seasoning mixture.
- Rub fish pieces with green seasoning and allow to marinate for at least 1 hour.
- Add oil and butter to a pot then add fish head and/or tail.
- Add onions then sauté until translucent.
- Add tomatoes, pumpkin and remaining green seasoning to the pot then cover and allow to simmer for 12 minutes.
- Add ochro, carrots, potato and dasheen then add water. Bring to a boil on high heat then reduce to medium heat.
- Cover and simmer for 15 minutes or until veggies and provisions are cooked.
- Add pieces of fish along with green seasoning to the pot then allow to cook for 4-5 minutes
- Add additional lime juice and salt to taste
