Guinness Pulled Pork Sliders

Chef Gerard Marquez aka “Chef G” takes it to a whole other level showing us to make these Guinness pulled pork sliders on homemade Guinness bread. This is for all the Guinness lovers out there.

Guinness Pulled Pork – Ingredients:

  • 3 lbs pork leg or shoulder
  • 2 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp allspice
  • 2 tbsp thyme, chopped
  • 2 tbsp oregano, chopped
  • 2 tbsp celery leaves, chopped
  • ½  cup oil
  • ½ cup brown sugar
  • 2 onions
  • 1 carrot
  • 4 stalks celery
  • 6 cloves garlic
  • 3 pimentos
  • 2 bay leaves
  • 2 star anise
  • 1 tbsp coriander
  • Salt to taste
  • 1 cup water
  • 1 btl Guinness

Method:

  1. Wash, trim and cut pork into smaller pieces, add all seasonings, mix together and set aside.
  2. In a hot pot, add oil and brown sugar, when sugar begins to caramelise add the mirepoix, pork bone and seasoning, stir well and add water and Guinness. Let simmer for about 5 mins.
  3. Pour the simmering liquid to the pork, cover with foil and place in the oven at 375 for 3 hours.
  4. Remove from the oven, uncover and separate the meat from the liquid, pour the liquid in a pot and simmer until reduced by half.
  5. Once the pork has cooled, shred the pork and add the reduced Guinness reduction.

Guinness Bread – Ingredients

  • 2 ½ cup flour
  • ½  cup water
  • ½  cup Guinness
  • ¼ cup sugar
  • ½  tbsp salt
  • 1 ½ tbsp yeast
  • 2 tbsp butter
  • 2 tbsp flax seed
  • Pinch nutmeg
  • Pinch allspice

Method

  1. In a bowl dissolve sugar in the water and add the yeast and mix until incorporated.
  2. In a separate larger bowl, add the half flour, salt, allspice, nutmeg, flax seed and mix together and make a well in the centre.
  3. Pour the wet ingredients into the well and mix together, you can use a mixer or you can mix by hand , add the remaining flour as you mix to get the consistency you want, the dough should be soft and springy.
  4. Place in a greased bowl and set aside to rise until doubled in size.
  5. When fully risen, turn out dough onto greased work surface, cut, portion and roll into buns and place on a greased baking tray to proof again before baking.
  6. Once risen bake at 350 for about 15 to 20 mins or until brown.
  7. Set aside to cool.

Cranberry Coleslaw.

  • 4 oz cabbage
  • 4oz purple cabbage
  • 4 oz carrot
  • 2 oz cranberries
  • 3 tbsp mayo
  • 2 tbsp Dijon mustard
  • 1 lime
  • Mix together.
