  • 6.75 oz eggs
  • ¼ tsp clove powder

  • 10 oz Low fat milk + 2 oz to cater for evaporation during scalding.

  • ½ star anise
  • 2 black tea bags of choice vanilla, apple spice etc.

  • Add eggs individually, ensuring each egg is fully incorporated and mixture is light and aerated.
  • Alternate flour mixture with milk mixture
  • When all of the flour mix is incorporated, mix for 30 seconds more, taking care not to overmix the batter.
  • Preheat oven temperature to 350°F/180°C
  • Pan mixture in desired baking dish (gently but firmly knock dish against work table to release any trapped air bubbles)
  • Bake for 30 - 38 mins
  • Allow the cake to cool or wire rack after de-panning.
  • When fully cooled, frost or decorate as desired
  • Enjoy!
