These vegan lentil burgers are the perfect Lenten cheat meal. This recipe utilizes an array of veggies, aromatics and spices to create a delicious vegan lentil patty that can be enjoyed as a sandwich or as an accompaniment for salads. We created a “flax egg” for the binding agent but you can also cassava flour or green fig to bind your patties.
Vegan Lentil Burgers
Ingredients

- 4 cups lentils
- 1 1/2 cups mushrooms
- 4 small onions
- 1 head garlic
- 5 pimentos
- 2 small carrots
- 1 cup broccoli
- 2 fleggs (flax eggs)
- 1/2 cup bread crumbs
- 1/2 tsp coriander
- 1 1/2 t mustard powder
- 1 tsp geera
- 1/2 tsp black pepper
- 1/2 tsp msg
- 1 tsp paprika
- Salt to taste

Vegan Lentil Burger – Method
- Put lentils to boil in a pot with 4 cups of water.
- Add in 4 cloves of grated garlic and a whole onion chopped to the lentils
- Grind flax seeds to make flax meal
- Put two tablespoon of flax meal and 4 tbsp of water together in a bowl and set aside to make flax eggs. Store in fridge to help it thicken
- Chop broccoli into small pieces
- Grate carrots
- Chop onions and make garlic into a paste
- Chop mushrooms and pimentos
- Sauté onions in pan until clear
- Add in vegetables into pan starting with mushrooms
- Add all spices to the vegetable mixture and salt to taste
- Cook until tender
- Add lentils and cooked vegetables to a larger bowl and mix.
- Add in flax egg and bread crumbs. Mix to distribute evenly
- Mold into patties; make a ball of mixture and then flatten
- Place patties into parchment and refrigerate to firm up
- Cook patties on high heat, 5 minutes per side and serve warm on a toasted bun with your favorite burger toppings! (We did fresh arugula and spicy vegetarian mayonnaise)
