Tomato & Basil Puttanesca

Tomato & Basil Puttanesca




Ingredients

  • 2 tins Brunswick Tomato & Basil Sardine Fillets
  • 1 pack or 400g Spaghetti (cooked)
  • 6 tomatoes (peeled)
  • 5 cloves garlic (minced)
  • 1 large onion (chopped)
  • 3 tbsp capers (chopped)
  • 2/3 cup olives (sliced)
  • 1/2 cup parsley (chopped)
  • 2 tbsp basil (chopped)
  • 1 tsp red pepper flakes
  • 1/4 cup olive oil
  • 1/4 cup hot water
  • salt and black pepper (to taste)

Method

  1. Add olive oil to a pot then add garlic and red pepper flakes, sauté on medium/low heat for 1 minute or until garlic is fragrant.
  2. Add onions and sardines then continue to sauté for 2 to 3 minutes.
  3. Add tomatoes to the pot, making sure to mash them into smaller bits in the pot.
  4. Add hot water then continue to sauté for 5 minutes on medium/low heat.
  5. Add capers, olives and basil to the pot then season with salt and black pepper to taste.
  6. Add cooked spaghetti to the pot.
  7. Remove from heat then add fresh parsley.
  8. Serve with freshly cracked black pepper.
  9. Enjoy!
